A doubt: If you are supplying Ethereum against DAE as collateral which is larger in value than DAE borrowed, why borrow in the first place? you can just sell your eth tokens to get the funding

Yes.. please do a piece on V2. Defi is a rabbit hole that is incredibly difficult to get out of once you go down it, such the amount you learn as you ‘fall’. Great stuff.

AAVE and similar platforms are not lending platforms, they are more like pawnshops, where you can borrow something only by giving something more valuable as a protection.
With real loans (e.g. bank credits) you need little or no protection, to get smaller loans you most typically need your ID and a proof you have a job. I doubt if such REAL lending platforms will ever be possible on blockchain.
