Hey Josh!! Can you do these again but make them free of refined sugars? I've been super sick lately, but after removing refined foods from my diet. I've been so much better but gosh am I dying for a Macaron!!!
ОтветитьHuge mistake spraying oil on the cookie sheet, under parchment paper!! Bad advice! I followed that advice and it was a complete disaster!! The oil made the paper bubble in places, wrinkle in others. Use A Silicone Baking Mat!!! 🤬

ОтветитьI know this is an old video but just wanted to say………thank you for saying “macaron”. Soooo many Americans even AFTER being told “it’s french, and “this” is how you pronounce it” still insist on “macaroon”. They are, quite apart from the disrespect to another language, two entirely different things. A macaroon is a coconut and meringue biscuit(cookie if you insist) that’s chewy and often browned a bit. Josh, your macarons were lovely…..my favourite combination that I ever made was a lightly peach coloured macaron, brushed lightly with pale gold edible dust, sandwiched with a buttercream made using a purée of dried apricots cooked with some sugar and water, and a touch of rose water. Perfumed, tangy, sweet and gorgeous especially after maturing for at least a day.

ОтветитьI followed your recipe exactly, and my macarons turned out PERFECT. They look like they came from a professional bakery! They were also pretty affordable and easy to make--just took a bit of patience and dedication to following the process to a T.
It was my first time making macarons ever, and I think after this I will continue to for quite some time. (Maybe playing around with different extracts and different flavored fillings)

ОтветитьSo I tried this recipe out. My macarons looked really good all the way throughout, but when I tried to remove them from the parchment paper after baking, they got stuck. I tried using a knife to remove them, but they were so stuck that they ended up breaking and completely separating from the skin on top. I’m not sure what went wrong. Can someone help with this?

ОтветитьJust as a tip for anyone trying to make these, don’t add all your almond & powder sugar mixture all at once, mix in 3/4 cup worth, incorporate, then add all the rest. Then also he had figure eights, but you want it slightly more runny than he had it, you should be able to do 2-3 more figure eights with one scoop
ОтветитьAnyone can make imperfect macaroons really easily but it's generally much more difficult to make them perfect, personally I think imperfect and random macaroons have a lot of charm and enjoyment in them.

Ответитьall your recipes have a lot more sugar than other ones, is there any reason to that ? for exemple, all macarons recipes i've found give almond powder and sugar powder in the same quantity. Even for your recipes with flour, everyone knows that sugar should not exceed flour but you still do with up to twice the quantity. Is your sugar less sugary or what ?

I think I mixed it too much because the batter was way too liquidy and spread out like crazy, right now I’m waiting for the macaroons to harden befor putting them in the oven, hope it at least tastes nice😢
