This anime literally shows that a mentality of a person is very much affected by the society. Inspite of having power of own will ,sometimes you do get to a point where you don't believe in free will anymore. Grisha felt the same. He was blinded by revenge in Marley because of their ancestors. And then manipulated by Eren.

Fun fact: In episode 1, Grisha doesn't look at adult Eren but instead he looks at young Eren. But in chapter 1 of the manga, Grisha clearly looks at the side of the door where adult Eren was at.

Something you have to realise is that Eren is sending memories from his POV to Grisha. Meaning that when Grisha was looking directly at adult Eren in the doorway, he wasn't petrified at the sight of his adult son; he couldn't even see him. He was absolutely terrified that he was seeing, through memories, an invisible entity staring right back at him. From Grisha's POV, he was living life in 3rd-Person, feeling like he was always being watched by a stalker he could never catch. Terrifying.
