How many total hours was your cook time? And do you think the time on a 15 pound brisket would be much different? Trying to time for a family gathering

Thats what I learned to smoke with and still use my weber as a smoker. I gotta thing about keeping my temp steady and exactly 225-235. Fire/temp maintenance part of cooking is the best part for me👍👍

Young man, great video with lots of detail. I'm going to try this on my 22" Weber kettle tomorrow morning. I've got a 5 pound brisket I purchased last month on my trip to the Lubbock HEB store. Thank you for sharing!!

To the point, no chit chat, love it. Had a lot of doubts if smoked brisket was possible without an actual smoker, but that looks straight up beautiful.

I finally got around to doing this and it turned out quite good! Next time, I’ll foil the heat facing side to prevent the jerky effect on some of the bits on that side

Awesome. video again Brad. I'm going to do a 5kg brisket next weekend and wanted to use similar techniques. I'll be cooking on the weber on Friday, the day before the party, like you did, then finishing the cook in the oven but not serving until the night time on Saturday. Do you think a 24 hour hold in the oven would be ok? Or should I let it rest after I take it out of the weber and cool it, then do the whole second stage of the cook during the Saturday. Any advice would be appreciated. Cheers mate.

What’s the benefit of using water in the slow n sear? Does it just help regulate temp or does it also help keep the brisket moist?

Since granulated garlic and onion in your rub could block salt and smoke penetration (lol, that's what she said). I'm testing out a theory today.. dry minced garlic and onions pulsed a few times in a spice grinder to make them the same size as the kosher salt and coarse pepper. Stay tuned...

Hey Brad! Thanks as always for the knowledge. I watch the weber series almost every day. I'm gonna attempt to pull this off in a couple weeks for my birthday. I'm curious why you went with the paper as opposed to the foil boat this time. Is there something about paper wrap that works better with the weber cook?

I've had a weber for 16 years and a slow n sear for 5, but I've been terrified to do a brisket in case I mess it up.... but thanks to your vidoes and a Choice brisket I got on sale for $40... I'm ready to give it a go.
