🍅 Ingredients:
All-purpose Flour: 2 3/4 cups (about 350g)
Water: 1 to 1 1/4 cups (about 225-230g)
Olive Oil: 1 1/2 tablespoons (about 20g)
Salt: 1 1/2 teaspoons (about 9g)
Fresh Yeast: 2 1/2 teaspoons (about 8g)
Honey: 1 teaspoon (about 5g)
Tomato Passata (strained tomatoes) as needed
Mozzarella Cheese: 8.8 ounces (about 250g)
Cooked Ham: 5.3 ounces (about 150g)
Sesame Seeds
Milk and Egg for brushing
🧀 Instructions:
In a stand mixer, combine the all-purpose flour, honey, and yeast, adding water gradually.
Then add olive oil and finally salt.
Give it a few folds and let it rise until almost doubled in size.
Now divide the dough into balls of about 1.4 to 1.8 ounces (40-50g) each, and let them rise on a baking sheet for an hour.
Roll out each ball, fill with tomato passata, diced mozzarella, cooked ham, and oregano to taste.
Seal and pinch each pastry tightly, flip to the other side, and brush with a mixture of beaten egg and milk.
Finish with sesame seeds and bake in a preheated oven at 425°F (220°C) for 18-20 minutes.
