Go to Settings
Scroll down and select Advanced Features
Tap on Labs
Tap on Apps allowed on cover screen
Tap on the toggle icon to the ON position
Once enabled, find the application you'd like to use on the cover screen and tap the toggle switch next to it.

The downside to this is that you can only allow limited applications on the Samsung Z Flip 5 cover screen. Not all applications are supported.
