How do you come up with these dishes in a half hour? Do you just study a bunch of standard recipes before the show starts and can slot special ingredients in?

Thank you for posting these super helpful and inspiring videos! I love wandering around asian markets (and buying spices and sauces!) but I really don't know how to use them properly. My initial reaction without making this dish is that the flavors are too strong for a protein as delicate as lobster. But I'll give it a shot!
