In the episode "Blood Eagle" Bjorn asks Ragnor what a blood eagle is. He tells him the back is cut open, ribs chopped off, lungs pulled out & the offender must suffer till he dies. If he stays silent will enter valhalla but if he screams he'll never enter it's portals.

Jarl Borg was a viking, so entering Valhalla is the only thing he would want in death. Aella obviously isn't so he screamed through the ritual.
