After you wrap, do you increase the temp on the smoker? Or is the entire cook done at 225?

I bought his seasoning from academy sports . It's amazing and no doubt the most amazing flavor I've ever tasted on a steak. I highly recommend you go try his seasoning it's around 10 bucks guarantee you will have amazing tasting meats

His butcher paper foil combo is not a bad idea. Foil the fat cap side to get it rendered and the meat tender, and get the meat side tender without compromising bark texture
