So what about the levellers? In that case, using a leveller, in order to get flat puck surface just before the tamping, gives us some benefits or they are just a money trap as an industrial products for coffee geeks?

There's the importance of having a good grinder.

I was using the Breville Barista Express built-in grinder which creates crazy big clumps, so I didn't have an option besides WDTing like a mad man. Now I got a new grinder (DF64) and the quality of the grinds is something else.

I will try following the advice and grind directly into the portafilter and tamp right away. Right now I'm using a dosing cup, transfering to the filter, WDTing, OCDing and finally tamping... still get coffee spurts going in every direction, sometimes it looks like a water park attraction.

This echoes my experience, the less I do to disturb the grounds before tamping the better my results, I dose straight into my portafilter with a good size collar with my focus on hitting the centre of the basket, after that I do 1-3 gentle vertical taps to lower the hill, then I shallow distribute followed by a very gentle tamp, works great!

I don't understand..
I always have a center lump and I try to even the grind coffee in the basket by moving a little the portafilter while grinding,
But I always have more in the middle or at the edge and then I tamp

I'm glad I've discovered this videos even though they are already 6 years old. I guess things haven't changed at all. This will be very useful for my new job as a barista apprentice. I have a question for Gwilym: What do you think about distribution tools? Do you think they are worth acquiring and using them in a work environment? I'm worried about consistency in my shots. I'm pretty new into Espresso machines and so I was wondering what to do to improve my coffee distribution. Thanks for this videos :) Hope you are doing well in 2021!

This is a great lesson learnt for me.I frequently use ways like knocking around the sides and bottom, but I realized that it creates more channeling. So I had decided to control the filling during the grinding process. I do use finger a little bit (I hope I will not do that again), It really helps a lot.

One thing I would like your opinion, why are you not using the OCD distributor? Do you think the distribution during the filling process during the grinding is sufficient ?

I call shenanigans. When he puts the portafilter on the scale it has a very high mound. Then in the next shot its as flat as a pancake. So this actuallys whos us nothing unless you know how to wiggle your nose and magically make that mound disappear.

If too difficult to get a good distribution, (doser) using a small recipe above the PF and shaking the mixture make it very fluffy; small knocks with my hand all around flatten it

Hm. Seems like you are still hitting your portafilter to metal, don't you?
I usually knock my filter to the table vertically when it is in level horizontally.

i have wached this series of video before i got to work as a barista i came back to it a few month ago and now that i've got the opportunity to work in one of the best coffee shops in town i had to come back to it, thank you very much for this series, each time i find something new :)

Hey Gwylim, you are a very gifted teacher. Thank you for your videos. How would you recommend equally distributing the coffee on an older Gaggia MDF? I have to pull the lever onthe grinder while I hold porta filter, therefore making it difficult to evenly distribute. Could you help me?

How many grams u use it? What when i got a basket from cheap machine with gummy rubber? Should i grind 14-16 grams at once for double shot or 7-8 g tap and another 7-8 g.

Hello Mr. Davies this video is really good. Helps a lot at work. Recently I'm a barista too in Bandung, Indonesia ( If you haven't know my city or my country, please kindly check out on google. They will tell you :) ) . But I have a question. Is it ok to knocking the porta filter into the grinder porta filter handle ? Because one of my friend he is a Q grader said that knocking porta filter into grinder handle gives something like a tamping motion or it's like tamping but in light pressure. 


Please correct me if I'm wrong

Isn't it all you "champions" that perpetuated the now wrong method in the first place? It just feels a little like you're back tracking and doing this for publicity. What's to say another Barista champion won't come along and say nah we should be stirring it with a shovel before tamping?

(Disillusioned with all this barista world champion stuff) More myths to sift through.

Have to say I'm not overly impressed with this lesson. For me the biggest improvement I made when using splurt-tastic VST baskets was nutating the bed with my tamper.
