hello, do you think this works for the new ip cameras that also record audio and are full color... do you think that by making this connection it would record audio or only give video?

All data pins are necessary for 1000Base-TX. Only 100Base-T has free pins.
If you distribute the 5 volts over long lines then the voltage is reduced.
This is also the reason why higher voltages are usually used which are reduced in the camera.

For 100Base-T what he actually is doing is passive PoE. It‘s nothing new, these commercial adapters usually do the same thing, they have the required 2 pairs for 100Base-T and utilize the others for power.
This will be enough for many devices like small access points (with SISO WiFi n) or cameras. Still you should rather use a cheap passive PoE injector.

Why don't you just use all the wires on the camera side in the ethernet port and splice just the router side in the power adapter?

I would like to inform everyone here that running low voltage high amperage over 26awg Ethernet wire over a distance is dangerous.

Best case, too much voltage drop means the camera is flakey. Worst case, the wire heats up and starts a fire. Made even worse if even 1 of the pairs loses contact, forcing the other wire to get hotter.

Why do you solder together the blue/white blue ? Wouldn't 1 of them be enough for a positive?

If the cable is at least Cat5E (1Gbps) and the switch is gigabit, then by doing this split you will drop the data rate to 100Mbps, so the port switch will negotiate at 100Mbps (Cat5).
