As almost always, the people and especially the cooks and farmers and ranchers and mothers and grandmothers of Italy have a great deal to teach every uninformed, untraveled American. These steaks are something from another world culture and they are phenomenal.

ОтветитьI ate here. I can say with 100% certainty that as a steak lover I did not like this and I tend to eat my steaks rare/medium rare. The internal temperature was barely lukewarm, I felt like I was eating a cow that just died. To each their own but if you go, and you ask for it to be prepared medium rare it won’t come out medium rare. They cook it one way, raw’ish. We even sent it back to cook some more, still can back raw. Lesson learned, next time I don’t eat steak in Florence.

Ответитьi tried it in the l’oste yea the meat was really good, but i found an open market at the center of florence at MERCATO CENTRALE they have a better cut of meat that really needs a visit, maybe i was just at the right moment,
it was out of this world the best steak i ever had.
maybe its more about the aging process, what i had was about 2-3 months aged.
I was cautious because of how rare it is. I usually go medium rare. But florentine steak is absolutely divine. Wouldn’t want it any other way 👌🏽 perfection

ОтветитьWe had these steaks a while back in a restaurant in Orbatello in Tuscany called D'Egisto My friend had the largest Bistecca Fiorentina on the menu and the owner said if he could finish it in one go at the table he would get it for free. Well he did finish it and all the waiters came out and applauded him when he took the last mouthful.

ОтветитьI love a rare lamb steak, but this might just be too rare for me. Maybe if it was cooked an extra 3-5 minutes per side I'd enjoy it but that rare is just too much. I very much salute any and all who enjoy that but it's quite simply not for me.
ОтветитьLove the steaks in Firenze. The only bad part is some places will either “accidentally” serve the wrong, often times smaller piece to you maybe it was on purpose to scam us tourists.
