Jolene's Raspberry Coconut Bars

1 Cup All Purpose Flour
1 TSP Baking Powder
1 Stick Butter : Chilled, Cut into small pieces
2 Eggs
1 TBS Milk
½ Cup Raspberry Jam
For The Topping :
2/3 Cup Sugar
½ Stick Butter Melted
2 Cups Shredded Coconut

Turn the oven on to preheat to 350F, You'll need an 8 Inch Greased Baking Pan
In large bowl, mix together flour and baking powder. To be really fancy, you can use a pastry cutter or two knives and work the items in the bowl, into coarse crumbs, I prefer the mixer lightly.
Stir in Eggs, 1 at a time. Add the milk and stir until a soft dough forms.
Spread the dough out into the prepared pan, stretching it like Pizza Dough.
Spread Jam over Dough In Pan

In another bowl, mix sugar and melted butter while stirring in the Coconut.
Spread this topping over the jam layer.
Bake until lightly browned, about 30 minutes, Cut into Bars
