I love these people, but covering the okra with foil caused mushiness and didn't even out the browning at all. Do it without the foil and flip them. The truth is that you get slimy okra if you steam them for the first half of the cooking process.

Best way to have okra is breaded in cornmeal, and slow pan fried until very slightly charred around the edges

I first discovered how wonderful roasted okra is when I had masala bindi--okra tossed with Indian spices and roasted. Talk about moreish!

I had a buddy that would do this on a hot - ish smoker/ grill with wood chunks as a snack at cook outs while waiting on the ribs to get done. Was amazing.

Have you ever sated chopped Kara ~ 1 cm slices with thick slices of yellow onions after getting rid of slime and adding some salt, black and red pepper and say half a lemon juice. Absolutely delicious!

Well I had high hopes but I covered for 12. Uncovered and cooked for 12…then cooked for 8…then cooked for 4….then cooked for 4 more….then a few were crispyish….then cooked 6 more and most are a little crispy. Oven temp was accurate with a manual thermometer. So needs some tweaking for sure

I am guessing that the “ vegetable oil” used to roast the okra and the dipping sauce is actually a seed oil. I will give this a try but will substitute ghee or perhaps coconut oil instead of seed oils.

Instead of that, slice them in 1/3 - 1/2-inch circles and cook them on high heat in a cast iron skillet. And use a blackening spice blend. Takes a while to get there, but any slime that starts at the onset of cooking is quickly turned into flavor, (And dries up). I've been cooking okra this way, (and in gumbo), for over 30 years.

Vegetable oil? Shame on you. You guys are supposed to be experts. Don't suggest people use extremely unhealthy garbage like seed oils. Instead, go with extra virgin olive oil.

Stop using vegetable oils! NO seed oils are safe! No canola, no corn, no soy! Go to coconut oil, olive oil, or avocado oil! Butter is great where you don’t need very high heat.
