Jon refusing Stannis made him want his service even more. He saw that Jon had that northern loyality that made it possible for Starks to control such a large kingdom for so long.

As much as i love show Stannis (except for buring shireen but i blame D&D for that, book version would never do that), book Stannis feels a lot more cunning when he's in the North. He liberated and led the attack on Deepwood Motte when it was under Asha Greyjoys occupation to get the Glovers on his side, and Wyman Manderly is probably going to align himself with Stannis. He also didn't kill Mance Rayder, he burned rattleshirt (lord of bones) instead and let Mance infiltrate Winterfell with some wildling women to rescue fake Arya (Jeyne Poole) from the Boltons. He also isn't planning to march on Winterfell because he knows that he can't beat them in a siege with his inferior numbers but he plans to draw them out and use the envoirment to defeat them such as a frozen lake.

I never understood why he needs to pledge to Stannis, so he will announce him as Jon Stark and he will no longer be a bastard. He's the fucking King in the North, he could have done this himself this whole time lol

Imagine the rush of affection Jon must have felt for Lyanna in that moment. His famliy's gone and the world thinks they're traitors. He's grieving and feels alone, and probably can't stop thinking about them. And then, suddenly, along comes a reminder that the North remembers them too.

The thing is, and this goes back to Robb naming Jon his heir, is he not forbidden from taking lands and titles as a sworn brother? He hasn't died yet in this scene, he doesn't have the out he will later on thanks to Thorne and co. Surely even legitimizing him wouldn't work?

This Jon and Season 7,8 Jon are 2 different persons. In the earlier seasons Jon was much confident and had more dialogues.

Jon is honourable he won't leave the night's watch.
Also the writers:
My watch has ended.
Still the writers:
We kinda forgot.

Let's face it, they hated Stannis because they did not understand his character at all. So they could not give Jon to help him (because he would have won easily). So they put up this canard and had Jon refuse. Then they later made Jon get out of the vow with a technicality that does not make sense to anyone with a double digit IQ or higher. "It shall not end until my death." Um sweetie, the vow goes "I pledge my life and honour to the Night's watch." Not to mention it is an age-old power of kings to release people from their vows whatsoever they may be.

In the book Jon had a legitimate reason to not become Jon Stark under Stannis. Stannis specifically required Jon to burn the weirwood and the godswood in Winterfell and basically annihilate the Old Gods from the North. No northerner would follow him after that. Even if they were unbelievers, destroying such a central symbol of the North's separateness from the rest of Westeros would not fly. Also in the book Jon was already the Lord Commander when the offer was made. His brothers had chosen him so he could not abandon them now to another contentious election.
