Silphium was an important plot point in an italian horror tv series in the '90s. It scared the ** out if me when i was a kid, then i watched it again recently, and it still scares me.

The first time I saw pork chops with apple sauce I thought it was not so good combo. And then I tried it! Now I do my best Humphrey Bogart impression when I say I'm going to cook it! Give me a like if you know the reference. I just want to know I'm not the oldest guy.

Pork and apples-still a great combo today. My mom always served pork chops with applesauce. The flavors just complement each other perfectly

Max, I bought your book. Nicely done young man. As for this recipe. I have bought the spice, the Garum, the posca, and long black pepper corn.

One simple question... Is ground lamb an acceptable substitution for pork or beef?

Since Hadrian's Wall had – I presume – local indigenous sources of meat... including lamb (and mutton).

But, I must make this as your reaction was profound.

Now, I have all of these herbs, spices, fish sauce etc. specific to your recipe. I guess I need other recipes that use all this I bought. LOL, it was not cheap

Please help.

Just made today. Complex flavour profile but the asafoetida was a bit much. Never experienced before and the smell is too much. Had to stuff my nose with the extra mint leaves.
