I have used this on cymbals, and it works well...just be careful to keep it subtle. It can wreck the sound pretty quick if you dig too deep into the signal.

I just used this method to tame a bass guitar track that had a bit too much "clank." Works like a charm!

Best solution is to mic them properly and have a goiod drummer who can plat well too! :-) only half snark.

I have seen a video of using de-esser for guitars a few months ago and have been using that trick ever since.  It's my favorite way to calm the edge of harsh guitars. Especially my strat which is very dynamic and cutting.
