Pad Thai is NOT traditional Thai food, invented in recent history to appeal to Western tastes - much like your video.
If you want to get real go to the middle of rural Isaan, eat there for a day then report back.
Some suggestions: ant egg salad, shrimp paste with raw fermented mango, boiled frogs, bamboo root & rice

You gotta eat those with rice

And that's why fast food chains like Macdonald's never got big in countries with awesome cheap street food like Thailand.
