I disagree with his sauce stance. Dusted wings are elite but wings shoild never be swimming in sauce. They need a perfect glaze maybe 0.5 to 1mm thick depending on the viscosity of the sauce.

Sugary based sauces have a larger specific gravity when compared to butter or hot sauce based sauces. It's hard to compare in this case. This is why an adequate glazing makes more sense based on the wing sauce base.
