I'm a trained chef. Everything in this video is legit. The cooking technique is called Braising. And cast iron is amazing and has additional health benefits such as micro dosing iron into the food. Love the channel!

Just like my Mama made it. She did the most wonderful, wonderful chicken roast, turkey, lamb etc. This is only way she ever cooked meat, in her cast iron pot which a lid. Coming from the farm which is not that surprising...anyways also loved your version... Greetings from Sunny South Africa...😊😅😂.

My mom made her chuck roast similar to this method but she added a package of ONION SOUP MIX. She made in on a Sunday where she put in in the oven before we went to church and pulled it out three hours later ....I dream of those roasts.

What the baking soda does. is open up the pours in them meat. when you risen if off in warm water OPEN ALL THE WAY UP. Waiting to soak in the flavors When you put it on the fire the pour will close keeping the meat tender and juice. When it done let it rest about 30 min then the pour will open back up releasing some juices 👉👉IT will be the most tender, juicy, and delicious roast, you ever at

1st of all make a HEAVY baking soda brine. Put the roast in the brine in baggie, push all the air out, set it in the frig, over night. risen off good in warm water. pat dry. Then lot of melted butter all over it. Then the 1st seasoning is beef bouillon, 2nd garlic, 3rd salt, 4th black pepper. what ever else you may like👉👉 like mesquite rub ect ect. Then let it hang out for about a hour. to soak in the seasonings. Then i like to smoke it heavy in onion smoke. Then flame broil it. Then put it in foil about the last hour

For my small household, I used an under-a-pound hunk of chuck in an 8-in skillet. Adding one cup of water made for delicious meat but only gave me a few tablespoons of the succulent juice. My advice is to NOT scale down the water at the same ratio as the meat. Next time I'll try my 1-pounder in a 10-in skillet and fill slightly more than halfway up the sides of the roast. The au jus adds a lot. Simple recipes like this should go in everyone's repertoire. Many thanks!

I can not help it I need to add Rosemary, pepper, beef broth (instead of water) and maybe some garlic near the end. However I did have some Chuck Roast this way cooked by a neighbor. It was the best. Not sure why I can't create the same process ( lame-o). Fall back on spices so I won't be dissapointed.

Love your roast. It looked delicious. When I was a kid my mom cooked her roast like you did but the last hour she’s would add potatoes and carrots. When time to eat. She would slice the roast for us and serve on a platter. Made a wonderful gravy with the liquid left in the pan. Wonderful Sunday dinner. Do you ever serve it sliced instead of tearing it all apart? ❤

I have never seen a roast like that! Wow! We have an electric stove too so I never caught what temperature you had the top on when searing? I did hear the 300 in the oven for 3 hours. We are going to try this! Thank you for sharing!

I just got a beautiful thick chuck toast from my butcher. It has a beautiful eye and this will do it justice. I cook everything in my most loved cast iron. I have a dozen different sizes for every occasion. Thanks.
