For me I like to imagine that this old man is not being set upon by pirates that are stealing his horse but in fact is a lonely poor old man and with his last remaining strength is joining the crew as a privateer. but what to do with his horse? and the crew made a song about it all. the old man actually died shortly after joining the crew and the song is more about him than the horse. I cannot seem to find evidence of this but I have heard old horses referred too as "old man" and I have heard old men referred to as "old horse". I think they are playing on this.

This somewhat peculiar--sounding sea chanty was sung to commemorate "Burning the Dead Horse", a ceremony somewhat like the ceremonies performed on Navy ships when they "Cross the Line", and formerly performed at sea on merchant vessels when the ship's crew had worked off the advances on their salaries paid when they first signed on board and began to work at a profit. As far as I am aware, the ceremony of "Burning the Dead Horse" pretty much went out of use by the end of the 19th Century.
