The food quality in France is exceptional. The produce has more flavor. The bread is better. The dairy is much better.
ОтветитьI think the main reason is the use of a lot of butter everywhere instead of vegetable oils. If oil is used, then it's usually olive oil. This butter is also found in croissants, even in biscuits (Petit Beurre <= even the name of the biscuit contains the word "butter"), often used for cooking eggs, used a lot on the bread itself, and then with that bread you would add cheese or meat, some lettuce, eggs and tomatoes. That's like a typical family dinner, they eat a lot during the dinner. Meal 2x or 3x a day, almost zero snack. They drink a lot of water, and some red wine too, but not really stuff like fanta/coca cola/beers. Fresh orange juice is popular too.
Summary: lot of butter, almost no vegetable oil. Favored is fresh, unprocessed food.
Also yeah, they're not that thin, if you want thin: check Thailand!
So what kind of oil should we use to make bread?

I live in SE Asia part time and they dont actually eat as much rice as many perceive.
He could've just said that the bread in France is better quality than US, CAN, EUR because of the bleaching and fortification!

ОтветитьThis is exactly why I cook everything for myself and I don't eat pasta or potatoes or rice. I was 197 lbs in June and now I'm 180 lbs. I'm 6ft 1. I put myself on a very restricted diet that's almost all liquid plus a fresh salad with sliced beets
ОтветитьMy bread has whole wheat or barley, water, salt and is fermented with sourdough. When I read what American Wonder Bread contains, I'm amazed how such thing is legal.

ОтветитьIn America, a good way to help is to shop at Natural Grocers. Great store with strict restrictions about what they allow onto their shelves.

You brainwashed Americans think “free markets” “freedom” ugh. “Murica” - what that really means is your corporations have the freedom to poison you. Your representatives are bought by the food lobbies so they’re not protecting you. Regulation within reason is good.

ОтветитьThe one thing you did not mention (not to dismiss any of the others, which were also correct) was portion size. I married a French lady and when her family would visit (cousins, aunts, and anyone else they could think of lol) and we would go out to a restaurant it got to where they would all decide what they could agree to eat and order ONE meal and then ask for utensils for everyone. By the time the one plate was finished by everyone on their own plates they were quite content. They don't tend to eat to the point where they feel like they can't get up from the table the way Americans do. They also tend to eat much more slowly. (They also constantly felt rushed and intruded upon by servers at restaurants who would keep asking them how they were doing--they felt like they were being rushed out of the restaurant--which I think WAS sometimes true.)

Ответитьwhat about ancient varieties of grain like einkorn, spelt, and lentils and with chickpeas FRESHLY GROUNDED then made into a bread with a homemade sourdough starter. This lady i seen said that freshly grounded ancient varieties of grain and beans has a different gluten structure but i have not checked this out Myself but i am fixing to check the studies out; also, while intermittent fasting and consuming it not on a daily basis like a few times a week?

ОтветитьIsn’t it because they stick to using only 00 flour in Italy and France for their bread/pasta. Doesnt spike blood sugar as much. And produces way less gluten than flour we use in western nations. Flour that is less mucked with = easier to digest?

ОтветитьIn USA, it’s call bread, in other country it’s call cake, because there is 9 gram of sugar per serving while other country nothing. Doesn’t it look weird that you loath of bread look like cake without the icing.

ОтветитьSomeone I met at my job goes to Europe regularly. When she is there they go to a local bakery often for fresh bread. She always loses weight when she is over there and gains it back when she returns to USA.
I have for a long time been suspicious of food fortification. Synthetic vitamins. Of course our wheat is no longer what it was even a few decades ago. GMO etc.
Interesting to hear about the fortification of food in North America & UK. Regarding the UK, we are now completely swamped with US fast-food chains as well. They are everywhere; in petrol stations, retail outlets, airports, train stations and all over our city centres.
Main arterial routes into our cities where once thriving local communties with thriving local businesses are now dying a slow death.
The UK is now the obese epicentre of Europe.
Dr Berg, I see something interesting in the comments here (from the French, I think) that they eat salad at the end of their meal, and cheese too then, apparently. Why would this be?
