ОтветитьInteresting video. The one thing I don't get is that I grow some super hot red chilly peppers. However, when I get them in the pan and cook them with the sauce the hotness goes away and they become sweet. I don't understand why and what I am doing wrong. It happens on all temperature (trust me I've taken my time to try low-medium-high difference). The only time this doesn't happen is when I add the chilly seconds before the pasta is ready. Please help. What am I doing wrong when cooking chilly?
ОтветитьI grow a variety known a Mazzatti, which is about 3 times the size of those you used but they dry nicely to be used during the winter. A good level of heat without being "stupid hot" like some of the others I grow. My tomatoes were still green so I used a can of San Marzanos and squished them by hand... never to be done while wearing whites! So simple a dish!

ОтветитьAntonio in his his book Pasta replaced chilli with nduja. I tried that and will never make Arrabiatta any other way again its so delicious.

Who doesn't love this guy!!?? Cooks with passion and just goes to show, despite producing some complex dishes, they show us with their simple ones that you don't have to be a genius in the kitchen to get magnificent results. Let the ingredients do their thing!

ОтветитьI see many chefs just put in large slices of garlic. I’ve always chopped garlic finely and cooked it down so you don’t have to worry about a big chunk of garlic in a bite. But I guess it’s easy to avoid if they’re big chunks on the plate?
