Unohana would beat Gremmy. As we saw in the fight with Kenpachi she was able to instill some kind of fear in him, the KENPACHI ZARAKI. If she can do that to Gremmy, Gremmy is finished

Honestly, Bambi, Bazz, and Quilge have a way better shot at winning than you give them credit for. Bambi and Bazz have the sort of long range attacks that could mitigate Unohana's bankai to the point where it comes down to a coin flip.

Quilge just tosses her in jail. Unless you have Ichigo's plot armor, you just lose to Quilge's schrift. Unohana literally has no way to escape. lol
