I think my favorite story for this concept of killing God would probably be the hitchhiker's guide to the Galaxy, where an off-headed remark mentions finding a creature that proves the existence of God, only for this proof to kill God as God relies on faith to exist.

My favourite approach to killing gods is actually in DnD. There a god can't be killed per say, but put into an infinite coma. You see, gods are powered by worship, so killing a god requires removing it's source of power, by killing the religion and erasing it's name, by severing this connection to the worshipers through rare magical means, or by redirecting the energy elsewhere, usually a different god, similar enough in some aspect to take this one's place.
And, most god killing is done by gods, because they can steal the dead one's job and followers, because they have enough power to do so, and because they have an intimate knowledge of this mechanism connecting a deity to it's followers

In touhou most gods that live in the land they specifically made to keep on living are somewhat in limbo. Without faith a god in touhou just ceases to exist so many gods who weren't able to progress to the modern era move to gensokyo a bastion to what was once fantasy. Sure they get to live another day but compared to what they used to be these gods are very limited, they can maybe send rains or bless you with luck but they no longer shape mountains or lakes because of the very sensitive nature of Gensokyo if it falls apart then they are in danger of falling with it so they don't bother doing something like a holy conquest to get more faith for themselves they have to bitterly coexist with other gods who are in the same situation

I think it's super straight forward for humans to want to kill Gods. You spend all day at the beach doing back breaking labour in the hot sun to build a sand castle to destroy it or to watch it get destroyed by the tide.
Half the reason we build things is to destroy them

I Had an Idea for one of my Storys. It's (a bit) horror and follows a human who gets tortured by a human looking being and at the end that beings plan is to make him a god because "to kill a god you need a god". The being is a god and wants to die and for that they need to find a way to make him a god

I have a story where there are gods who are ordinary imperfect people and don't depend on worship, they are ageless and somewhat immortal but if one fo them dies the concept they embody dies off with them.

In my opinion, immortality is not being able to age, not be invincible.
Being invincible is what I think of being not able to die from attacks but still being able to die from aging.
I think if you have both than you're impossible to kill.

If you accept Christianity as truth and look at the objective facts of all the events that brought them to who they are today, you see that God giving up part of himself to die is just another ruse. An antidote to a poison he fed you himself. A cure that doesn't undo the effects of the poison causes in the first place. Another nail in the coffin of humanity as we blindly accepted it and committed atrocities in Gods vile name.

What he did was ritually bind himself to the heartstone to be functionally immortal, but he didn't ascend to godhood like Vivec and others did, and the reason why his fight is easy is because the backend of the questline is to get tools to destroy his source of power. Ironically, nothing stops you from killing Vivec by shanking him.
