Totally agree on the blade being too thick. It literally adds nothing but drag. The knife would be just as sturdy with 3mm blade stock.

I really like the way these look and have had my eye on the knifecenter exclusive red carbon fiber version but im a little hesitant to pull the trigger with all the fuss about heat treat in the community these days. MKM is tranparent about the rockwell range that they are heat treating the m390 on this knife to but its below the standard that i hear is most desireable for that recipe steel. Do you have any thoughts on this?

Thank you for the video Kevin! Halfway through so far. And while I listen to all the justified critique, another part of my brain is just noticing what a gorgeous knife this is and that I need a third. If that is happening to you too, give in! Bladehq has these on sale right now, so you can also buy an Opinel for your apple slicing needs and stay below what I paid :D
I'd advise against the Ti versions, they feel heavy too me. Also, knifecenter has an exclusive lava fat carbon version that I've had in my cart for weeks.
