I tried googling the difference between analogue and digital circuits. The explanations aren't very good, but I did gather that analogue signal is continuous whereas digital is discrete. Digital contains boolean logic gates. So, what makes the water computer analogue and not digital?

You should visit the Phillips machine at the Science Museum in London. A proto water-computer that was built in 1949. And that I only know of because it served as inspiration for the Glooper in Terry Pratchett's novel Making Money.
