Can't find a single reference online to "Tatemaki". How is this different to futomaki?

In my experience though I'm still very much a beginner the knife wiping isn't really an exaggeration. Rice gums up the blade pretty much with every cut and if you don't clean it you risk making your rolls ugly on the next cut.

This s*** would never fly in a restaurant. These extra steps take too much time and usually the fish used for rolls are the odds and ends that can’t be used for nigiri or sashimi. Rarely will you have a lengthwise piece of fish for a roll.
