Most people do not know that wood has antibacterial properties. This slows down the growth of bacteria that might be retained on a plastic cutting board.

Is cypress something else in Japan? Here in Louisiana, usa, cypress is very soft for a cutting board. Those Japanese knives would cut right through!

How do you look after the cutting board? Wash in warm soapy water, and after say a year dies it need to be sealed or planed again?

I am also a carpenter, I want to work in Japan.

I think it would be cool if the ribbons of wood shavings were included in the package which could also double as cushioning to protect the board.
