How to add color layers to a single color svg using Inkscape v.92

I have tried doing each step as you do it and my image will not break apart. What am I doing wrong?

Image won't break apart

When you brake a part a vector image to see different parts of the image of you can color them accordingly, the whole image turned to black. Is there anyway you can see different section of the image so you know what section is what. instead of randomly guessing into the black image to find the part to color?

Why don’t the menus show up?
