ОтветитьI went out and grabbed some tails straight after watching this, and omg so good! They're a new fav treat. The local fishmonger sells really cheap frames by weight, so I can pick up a lot very cheaply. The fishmonger was really confused why I was asking for tails!

Ответитьyou gotta deep fry them. throw them in cold oil and crank up to max heat. Once the oil is bubbling and in maximum heat, you lower it to medium and continue cooking. Remove once you see the edges of the tail almost burned but not totally. That way even the outer bones becomes crispy enough to munch. Depends on the size of the fish though.

ОтветитьI went back to where it all started for you and found this video. I thought I was the only one who broiled up my fish tails till they were crunchy good! I like rainbow trout but I think if I lived in the Keys I would increase my affinity for the snappers (yellow, red, grey, mut). So far - my personal favorite is black sea bass! A big one will offer up his peck fins and more. I also have striped bass. I have not yet broiled up the tail!~ But after seeing this video and the sacrifice you made struggling though the cod tail tasting... I'll try a striper vs black sea bass hopefully soon. PS. I get a lot of fluke but idk... I'm guessing fluke would be closer to your cod experience. To be continued...

ОтветитьMy local fish store would smoke their own salmon and sell "salmon fins". Not exactly the same but it was cause the deboning machine would pull out the finns with a big chunk of meat, so they'd smoke those parts and it became like "chicken wings" but smoked salmon

ОтветитьYou cooked all the fish in the same exact method when tasting them.
My only issue with that method is that not all fish meat will taste it's best using this same method.
Yes it makes the tail crispy but like for king salmon I bet the tail meat would have been better raw or even barely cooked.
Salmon has a certain butteriness when it's raw or barely cooked. When you fully cook it you loose something.
Also even sushi or sashimi is not just plain raw. Sometimes they do a mild cure with either just salt or even a rice vinegar etc.
I've watched dozens of your videos without seeing this until now. Fantastic. Little tiny fried shrimp tails are amazing too.

ОтветитьI find this absolutely disgusting. But I really have no reason to think that way. Just ignorant I guess. Ive eaten fish my whole life. Its ok. Not a huge fan of to me the tail is a waste part of the fish to be thrown out but thumbs up to those that eat all of the fish and enjoy it. Like I said I guess I am just ignorant
