Doing everything right but they are missing their demographic. This is a restaurant that belongs in Paris, not the smallest town in Scotland lol.

Asking French guys to become Scottish for a day - it's a serious challenge!.. I am Russian and I would think twice before putting on a kilt in that weather... 😂

That young French guy is just naive and inexperienced... I hope he gets it sometimes... The owner - it must be nice to be rich... And open a new restaurant, instead of fixing the old one...

That young chef is a great guy, but he is not in Paris and he is not in London... He needs to consider his location and the audience!..

All Michelin star level chefs and not a real cook between all of them the French will never last in Scotland

When I was an apprentice around '90 one bit of competition advice was that the dish be practical for use in service in a normal restaurant. These are the kind of plates that were scoring at the top of the heap yet they are impractical. Go figure.
