Every planet according to Vedic astrology govern certain parts of the body. For eg Sun is for Heart, eyes and strength, Moon is Mind emotions, Mars is head and so on . So I think that is what they carved. As you can see a knot like thing above sun , it is looking like a heart with arteries and knot also depicts strength. Above Mars you can see head. Mercury is nervous system so you can see a carving like network of nerves.
