This peach crumble is so good with vanilla ice cream. You can make peach crumble pie by adding a pie crust underneath.

Ingredients:
8 medium peaches, peeled, seeded, and sliced into 1/4" thick
1/4 cup brown sugar
1/4 cup white sugar
2 tbsp cornstarch or tapioca starch (flour)
1 tsp cinnamon, optional
a pinch of salt
1 tsp fresh lemon juice, optional

Crumb topping:
1 cup all-purpose flour
6-8 tbsp unsalted butter, cold, diced
1/4 cup white sugar
1/4 cup brown sugar
1 tsp baking powder
1/2 tsp cinnamon, optional
1/4-1/2 tsp salt
Note: If using salted butter, omit the salt.

Method:
1. In a large baking dish, mix peach slices, sugar, brown sugar, salt, cinnamon, and cornstarch together, stir to coat. Set aside.
2. In another bowl, combine flour, salt, baking powder, sugar, brown sugar, and diced cold butter together. Add cinnamon if wanted.
3. Cut in the butter with forks or a pastry blender, or by hand until resembling coarse crumbs.
4. Sprinkle the crumbs mixture over the peach mixture until covered completely.
5. Bake in a preheated 400 deg. F for 50-60 minutes or until bubbling and the top is golden brown.
6. Let cool before serving. Add a scoop of vanilla ice cream when serving.
