I've been thinking of visiting japan the past few months, and ofcourse i wanna visit mom and pop shops like this. but i'm worried since i don't speak japanese. how often do they speak english in place like this? and would i be considerd ''rude'' or anything for not speaking janpanese?

I am always curious if they use the same knives for years or even generations

Of course the pork makes the meal but IMO the panko is super important to get right. Now I'm craving some Tonkatsu lol 🥩🍚
