ОтветитьYeah buddy! I make this on my pellet smoker all the time, almost exactly like you did it! The eye of round from costco comes pre-trimmed of most of the fat, making it really easy. I like throwing the meat in the freezer for a half hour before slicing. It firms it up a little bit and makes thin-slicing a little easier.

ОтветитьPut the meat in the freezer after trimming its so you can slice it easier or it also helps being cold to slice on a meat slicer.
ОтветитьABSOLUTELY love your channel! I ran across it when I was looking for sausage making videos. I have been hooked ever since!!! Normally, I watch on my TV so I can only "thumbs up", but I cannot comment. I needed to jump on the PC to say how much I enjoy your channel and how AWESOME everything you make looks. I LOVE beef jerky!!! Two questions. The first, would the jerky turn out okay if you perhaps par-froze the beef prior to cutting it? I am asking because I am not sure I could consistently cut slices that thin AND second, how did you know the jerky was ready? YOu mentioned that it would take between 4-7 hours, but you cannot stick a meat probe in them (at least to my knowledge), so how did you know they were done? Was it the "bend" test you gave them? Sorry if these are silly questions. I am new to grilling / smoking. Keep up the great work!

ОтветитьGreat video, I love making homemade jerky, and I checked their seasoning kits out and they're very reasonable. I'm planning on doing a whole deer in jerky after Thanksgiving. I will definitely try the seasoning. Thanks for another great tip. ✌🏼

Would it have been easier to slice the meat if you had put it in the freezer for 45 minutes to an hour?
ОтветитьLooks easier than I thought it would be. The only issue I have is that my Pit Boss 1230g Navigator has a pretty small cooking surface. I'll have to find a way to tier the shelves/racks with a few inches between layers. I can set my smoker to the smoke setting and it will smoke at between 170 and 190 degrees. Any thoughts on separating the layers would be greatly appreciated.

Ответитьpro tip: Put the meat in the freezer for hour or so to firm it up cuts a lot easier.

ОтветитьI know a lot of people are mentioning freeze the meat first a little to make it easier to cut. That works great but what works even better is just having your butcher do it. I have never been charged for having a butcher throw an eye of round in the slicer. It does take some time so call ahead.
ОтветитьThe best ingredient you can add to ANY jerky is CARAWAY SEEDS..try it. The flavor it adds is so good, soak the meat over night with your seasoning and lots of caraway seeds, next day add more Caraway seeds to the meat before drying it, the flavor is awesome…..

ОтветитьShoulda chilled the meat before cutting, even partially freeze it, much easier to cut, as the meat is a bit stiffer. Id make beef jerky all the time, the only problem is i tend to binge eat it lol, you end up eating what was 5 lbs of beef, in 2 hours lol.
