Recipe:
2 pieces of salmon (center cut (no triangular pieces))
Mix together ricotta, capers, fish roe, cilantro, chopped walnuts, lemon, 1/2 beaten egg, salt/pepper. Unroll puff pastry, place one of the salmon pieces, spread mixture on, place 2nd piece on top, brush with egg wash, fold long edges over then short edges. Flip, brush with egg wash, score with knife, sprinkle coarse salt, bake at 350F for 40 mins or so. Yay!
