not 100% correct, if its only heat, that means he could use any wok to achieve wok hey. try use other wok besides carbon steel.

Move wok over sink and toss food in wok, if spill out, food falls into sink, thus avoiding greasy mess and clean up effort on stove top.

In my humble opinion, 镬气should be translated as ‘aroma of the wok’ rather than ‘breath of the wok’ .

Hei is the Cantonese pronunciation of the word 氣 (qi). Normally it does mean air, but I think in this context it means energy 💀💀

Most important thing to remember about wok hei is no, you cannot create it in your home kitchen. Your burners need to be at least 10 times hotter to even begin to be considered enough for wok hei.

one thing to correct here is that Wok Hei is almost the golden standard for all Chinese fry dishes but not only limited to Cantonese cooking.
