ОтветитьHope to get on a gumbo today or tomorrow. Been watching videos of "Zyustaan" lately and sure got a cravin' for some chicken/andouille gumbo. Got on eBay and bought Justin's "Gourmet and Gourmand" cookbook. Plan to use the "Rabbit/Squirrel" gumbo recipe only with chicken and andouille instead. Was going to use a dry white wine like Justin, but too expensive. Dry wine is "tart and acidic". So I thought, "tart and acidic....tomato juice!" So I plan to use tomato juice instead of wine.
If I remember, I'll update when it's all done and tried.

That looks awful. I make gumbo regularly, and this looks awful. Sure he's unique and colorful to listen to but it's all an act. Nobody talks like that, and hopefully nobody cooks like that. I've never heard an accent so silly (and I'm from rural south Louisiana). He's as much of a buffoon as Paula Deen, nobody has an accent like hers either. It's just goofy and insulting.

ОтветитьMy French family came down from Canada way back when the people had to follow the English, they were thrown out and went to Louisiana. Can’t say what I am but I know I am half French and I love Cajun cooking especially chicken and rice

ОтветитьI love this man, grew up watching him, and of course he greatly influenced my particular gumbo! (which you can see on my channel...yes shameless self promotion... ). However, I must insist that if you don't put okra in your gumbo, you didn't make gumbo, you just made stew.

Me too! When I make gumbo I substitute half of the beef or chicken stock with inexpensive merlot. It adds body and extra flavor. In addition to the onion, I add some of the rest of the "trinity"; green pepper and celery, and some sliced okra. Served over brown rice, man you can't beat it!
Justin was irreplaceable. Authentic Cajun, a wonderful cook and a great story teller.
