I have been watching your videos for about a year now. I have a 19 yo autistic kiddo who loves to cook. He walked in over the weekend when I was watching this one and said, "She looks nice, I like her voice", and started watching it with me. Several of the meals you prepped he said, "that looks good, we should try that. Can I make it for you?". It takes A LOT to get him to engage, and I'll echo what nearly all the comments have already said, you make it look easy and it gives him confidence (when folks generally otherwise DO NOT boost his confidence...). Keep on keepin' on. You're doing great work.

Made the ground beef potato skillet for lunch, and it was soooooo much better than I was giving it credit for from looks lol (shoulda known, though. As ALL of your recipes I've tried have been amazing!) I used american cheese, so it was kind of creamy. So, so good. My fiance said it was definitely a keeper. And my 2 y/o said the same! I made the Taco Dorito Casserole today. I can say, this recipe it a keeper. I don't care for refried beans and my husband won't eat sour cream. We both loved this dish. Thank you for this recipe. Next time, I might add some cooked rice to it.

A while back, I got a recipe from one of your videos for a quick French bread pizza. This has become our every Wednesday supper meal. I take my mother for chemo infusion each Wednesday, and my husband and I attend bible study at our church on Wednesday evenings. The pizza is so quick and easy to make, is customizable, inexpensive, and very tasty. I appreciate you and the time you take to make life easier for us.

You’re highly overcoming the beef. If should never be cooked fully when you still have to simmer etc. it’s going to be dry as hell. If you plan on doing so, add a teaspoon of baking powder to keep it from drying out.

Keep eating those veggies! I appreciate any easy recipes that are healthy and include multiple veggies. We are cutting meat for most meals but can sub beans or other options for a few of these. Be well.
