My ETS2/ATS Settings + Reshade Preset

Steering sensitivity should be at max if using 900 degree wheel. But in your case have a mouse.

For the gearbox there's somewhere a setting named smart shifting or something like that , if you are in the highest gear and you stop when you down shift it's putting you in a lower gear , 1-4th usually depending on the load and truck (for 12 speed gearbox) so you don't need to go through all gears or to neutral and than forward. The annoying part with that is that many times when I want to use engine brake is putting me in neutral instead of first or second gear.
I'm surprised that you're not using suspension lifting , on the road I always rise it to the highest level because the truck is more stable and when coupling I always lower to the minimum because it's easier to couple.
