The option to install Windows Server in Core mode was introduced in Windows Server 2008, and is not available in Windows Server 2003. Windows Server Core mode has just a Command Prompt window, with no desktop user interface. This reduces the footprint of the install, and reduces the attack surface. In Windows Server 2008 the windows have the Windows Classic theme which is the same as the full desktop install, in Windows Server 2012 and later they have a different theme to the full desktop install. In Windows Server 2008 the background behind the Command Prompt is blue, in Windows Server 2012 and later it is black. In Windows Server 2012 R2 and earlier the LogonUI still has a graphical user interface in Core mode, in Windows Server 2016 and later the LogonUI has a command-line interface when in Core mode.
