I thought there is a law that says all fish destined for sushi or eaten raw are supposed to be frozen first to kill the potential parasites.
ОтветитьGreat video, guys. Btw, even though a fish was farm-raised with parasite-free feed, that doesn't necessarily mean that the fish is safe and parasite-free. Because, what happened to the fish AFTER it was caught, and gutted, filleted, packaged, and further handled throughout the entire distribution and supply chain, could have affected the retail condition of the fish. So, I would assume that unless you caught the fish yourself in the wild, you should treat the fish as if it may very well be full of parasites and other issues. That's why it may make sense to go through the whole salt and rice vinegar submersion of the fish...pat dry...then freeze for a few days to kill any parasites. Then defrost to eat raw as sushi.

ОтветитьThank you for this. I cook a lot and love making sushi and have only used smoked salmon at home for fear of illness but as of late I have been eye-balling the salmon at Costco mainly the steelhead I will happily purchase some today.
ОтветитьThere is no such thing as sushi-grade fish as there is no governing body that grades fish, it was a marketing term used years ago to help sell fish for the sushi craze. With most fish that carry parasites you want to freeze the fish first before consuming.

Thank you for this video. I have been an extreme sushi fanatic for close to 10 years. I have even gone so far as to buy certain packaged fish that says “sushi grade. As I love sushi so much, it has gotten quite expensive and knowing that I can choose my own fish and not have to drive all the way to one of the two fishmonger is in my town to do so is wonderful. Thank you so much for this.

Ответитьi don't understand why you are reviewing wholesale Salmon from (true world) that no normal person can buy or would know how to prepare it....just a waste of time! You should have just done Salmon that you can buy locally at any grocery store or Costco!
ОтветитьScottish is the best flavor, more fat in the meat. If bought fresh, freeze for 7 days to assure that all parasites and parasite eggs are killed.

ОтветитьI think the white guy is the one paying for things. In most of these videos his ignorance tells us what he doesn’t understand about food. Hiro is modest and lets him talk but Hiro is the expert. These prices are way cheap. Everyone knows the smell is what tells you if it’s fresh. Farm raised is more suspect to me depending on the quality of the feed which varies between companies. Walmart fish is often frozen so I don’t know what the he means saying “fresh never frozen” at Walmart?

ОтветитьThere are crooked fish mongers who upon cutting the fish first pack in the container cinnamon bark chips or powder then leaves before laying fish then leaves more cinnamon then covered with some type of leaves then fish repeated until plastic tubs are filled then out in refrigerator at least 24 hours. They then rinse dry and pack in selling packages. This will give those who gave a sensitive nose and tongue the ability to smell agd taste a cinnamon taste. This type of fish can be deceiving people to use unsafe fish for raw consumption.
ОтветитьAlthough any salmon frozen for at least 7 days in a home freezer will kill the parasites if any exist it will change the texture of the fish after thawing. The FDA says any wild caught fish to eat raw is safe if frozen 7 days in a home freezer. Yet in order to reach any 4 to 5 star restaurant you will need to gave fresh, never frozen farm raised, parasite killing feed and be fresh caught in order to meet that standard.

ОтветитьMy father used to buy me a salmon sashimi when I was a kid. I remember I usually ate it just with rice and soy sauce. Back then it was so cheap and we could afford it once every other week. I haven't taste it again in a long time. I wish one day I could enjoy it again like used to.

My family and I relocated from Hawaii to Washington State about twenty years ago. It's extremely difficult for me to eat raw fish here at times compared to Hawaii because the idea of "fresh" seems to have a completely different meaning here in the states. My greatest concern here is the process of handling between the time the fish was caught until it reaches my dinner table. That time-frame is the danger zone and is honestly more important to me as opposed to the possibility of parasitic presence, exept for extreme cases. There are different types of fish farming here. Closed-cell farming which is done at a private location is one thing, but they also farm salmon here in the sound which exposes the fish to many bad things in a concentrated manner.
Price is never better than quality and assurance.

ОтветитьIts really funny because i had a great experience with the Walmart one recently, but decided to try an expensive, fresher fish for my birthday from a local large store that had a major seafood section in their store. I paid around 10.30/lb and it was easily the worst salmon id had in my life. Literally zero smell or flavor. Very very bizarre. I'm gonna try walmart again and see which experience was the fluke, but i wish Alaskan Salmon was even an option where i live.
