I first had a Rockybilt burger in Denver as a kid... my g-mom took me to a Rockybilt in downtown Denver in the early 60s. She went from a terrifying old lady to the awesome-nest grandmom ever. Man, those are still the best burgers I have ever had.

Thank you for sharing this! I grew up in Englewood and spent my lunch money on these hamburgers. I've been trying to find a recipe for the sauce for years. I can't wait to try yours!

The one on Colfax and Quebec was really small too almost look like the one on South Broadway in Englewood not sure if there was any more but I know the one I went to was on Colfax and Quebec I never did go to the one in Englewood actually didn't even know there was one there but I believe that is a Chinese takeout place now on South Broadway Englewood and not sure what the one is on Quebec and Colfax now next time I drive by I'll see what it is

There was also a rocky belt on Colfax and Quebec Denver I know I ate there many times and I'm going to be making a couple of Rocky belt cheeseburgers tonight or maybe just one double but no doubt you got the sauce right and that's what makes the burger and smashing them down and toasting the bun they actually had a double but they are simple and awesomely delicious

I put my other hand in the centre of the spatula to help push down and further smash the patty
Easier on yr wrist also mate

In some ways. You’re recording the history of burgers in America so they’re all not forgotten. Great work mate
Keep up the work

You forgot the chopped onions, added to the burger BEFORE you flip it. I never saw one made with chopped onion added after cooking. The sauce recipe was spot on tho, I make it to this day!

There was also a Rockybilt on the corner of 7th and Sante Fe in Denver in the late 60s early 70s where we always go to I remember they would put the 🍔 and 🍟 in a little red basket.

There was actually several Rockybilt restaurants around the Denver area, not just in Englewood. They were called the Rockybilt System. Many of the little buildings are still standing. Rockybilt was Denver's version of White Castle. I ate at the North Denver location many times when I was a kid. They were small hamburgers. Not quite as small as White Castles but a little smaller than a McDonalds hamburger. As far as sauce, I can't tell you which one is the correct recipe but my Dad's friend (Ron Bay) owned the rights to it and used to make and sell the sauce to a few bars and diners around Denver that continued to have Rockybilt burgers on their menu. The Rockybilt I used to go to was right by another big Denver burger landmark: The Barrel Restaurant, Humpty Dumpty Burgers, where the cheeseburger was invented by Louis Ballast. I would love for you to try to recreate that burger! To this day, it was my all time favorite burger.

There used to be one up on Federal and Speer Blvd, if I remember right. I can still taste that "special sauce". They also had the big burger that almost filled the plate. That and fries for 50cents. Thanks for the memories.

Hi, I have a suggestion. It's a burger that has in the last couple of years become known as London's best. It's the Dexter Cheeseburger by Fourlegs. I've had it, it's quite simply superb. Beefy beef, buttery buns. One of my favourite burgers ever.

Have you ever tried to duplicate the A & W TEEN BURGER? It was very popular in the 1960's here in Orange County California. They actually featured 4 different burgers at that time; the PAPA BURGER, the MAMA BURGER, the TEEN BURGER, and the BABY BURGER. The teen burger was the only one with bacon on it, and it was fantastic! THANKS!!

Kosmo makes a onion burger with some homemade special tools...just for fun copycat him! I think I'm on #8 videos of yours now tonight...great work Greg! Think I'll watch one more, the stuffed burger listed as 9 months ago...unless I see more..lol

Greg has a Vollrath 2.6lb steak weight, which is the greatest thing I've used for making smash burgers. Yet here, he uses an $8 spatula from Smart & Final. I own the same spatula and I love it, but I'm always looking for any excuse to bust out the Vollrath lol. It's huge, and it's way overkill for burgers, but I love it.

Greg, onions play such a major role in cuisines around the world--I venture to say it is in almost every meal. The health benefits are obvious (the Pyramid builders were paid in onions and beer), but onions are just so ubiquitous that we don't even think about them. I am going to ask Kenji (and others) about this, too, but I would like to know how and why.
