Why not lighting or dark infuse? It should give scaling tho I've never used crossbows.

I recently had a really similar experience with a cast only fth/int build. Ds2's melee is very awkward thanks to ADP and questionable animations so any ranged build becomes much more fun if a bit trivial.

I've never had problems with adp... I never spent a single level to it and beat the game, it isn't something that bad
