ОтветитьHi Chef, if I want a neutral mirror glaze with minimum sweetness, can I substitute the sugar with lactose? The sweetness of lactose is about 0.16x sugar. For other ingredients remain the same. What do you think? Please kindly advise. Thanks.
PS: luckily I can get pure lactose powder where I live, so I want to use it if possible .
