The base of the sour soup (Żurek) is rye sour, which you can buy in a Polish shop or make from rye flour. Its 7-days fermented rye flour with wather, garlic, bay leaf and allspice. That gives the sour taste. This is a typical Polish soup and must have a SOUR taste. Another essential is raw white sausage but smoked sausage is allowed. The sausage is essential, smoked rib or other smoked meat is just an extra. Onions, carrots, parsley are only additions.
