how long should it take to ferment if i am doing it without the pressure equipment

I finally just found another job after a terrible redundancy during the first lockdown. Now I'm back on, I'm fully buying the equipment to do this. I love how you can really explore different styles, it seems a great pastime, kinda like gardening or making food recipes.
