Ответитьi would have like to see how a motorized sharpener, such as the Chef's Choice, compared. I can easily sharpen a knife in less than a minute with the chef's choice, as opposed to 4 minutes or more with these weird contraptions. If you are sharpenig fifteen knives in your knife holder block at the same time, that is a BIG difference. Was wondering if hand-sharpening was so much better that it justified the 4X longer sharpening time?

ОтветитьMy uncle was a butcher. They are famous for having sharp knives. When he retired, he used to go around to Butcher shops and meat plants to sharpen their knives. in the trunk of his car, he had a hand crank two grinding wheels that came together and formed a V. He simply spun the wheels pull the knife through about 20 times and it was done. It was incredibly sharp at a perfect edge. He always kept it a secret, so they didn’t buy one for themselves. If you can find one that would be great for the next comparison. Keep up the great work.

Ответитьone thing that is apparent is the ones that have a laborious set up time and unwieldy equipment seem to perform the best as they have more than a few stages. if you do another round of this id suggest testing the "spyderco tri angle knife sharpener" as its small, easy to setup and still gives you great flexibility in angle while being quick.

On your next test I would like to see “the tumbler” or similar “rolling sharpeners”. I personally use and will never give up my lansky but for my mom I’d like an easy to understand & use sharpener that’s “good enough” for her not to have to wait on me to bring over my lansky 😅

You need to do it very slow to get repeatable results.
The Worksharp Pro kicks the Precision Adjust's butt. I really like both of them though

ОтветитьThe best sharpener is still a $50.00 Harbor Freight 1x30 belt sander.... need a 600 grit belt to sharpen, then a leather strop belt with green compound = $100.00

I've used pull throughs, powered wheel pull throughs, always disappointing.
Bought high quality steel set and they just last for kitchen work.
I would NOT want all my kitchen knives to be razor sharp.

Ответитьafter 14 years of making custom knives I found that using a 1x30 belt grinder and 5 different belts ( 150 - 1000 grit) is the most effective and faster way to put a razor sharp edge on my knives. I personally like a Convex edge, it is the strongest edge and is very easy to strop. This is my personal experience, many people are obsessed with having the sharpest edge they can get, an edge that you get cut by just looking at it. Let's remember that there are many factors that come in place when trying to get a fine edge, such as steel type, heat treatment and edge geometry. You can spend all your money on a sharpening system but at the end of the day, what matters is the quality of the blade because it is not about how sharp you can get the knife, what matters is how long it stays sharp. I can make a rail road spike knife and sharpen it to a razor sharp level but that edge will go bye bye after one cut. Thanks for the comparison! I really enjoy your channel!

The work sharp Ken onion edition is my go to knife sharpener. I used to use a lansky turn box, but the work sharp is more efficient.

I got the hang of it easy but 25 years later I broke it down, cleaned it up real nice and flattened the stones after I removed the old oil but I haven't been able to get that great edge. After much searching I settled on and bought the Work Sharp Ken Onion...it's due to arrive soon and I look forward to some nice edges..great review again..

ОтветитьAs always appreciated. But for knives it is fine an understood now. A year ago or so you tortured scissors. We have this KAI 7000 scissor too. But it has a burr and needs sharpening, however the angle is much larger than 17 degrees, more closely to 40 to 45. Do you have any idea how to sharpen scissors with the stone sharpeners. (i never believed in these pull through sharpeners, which is motivated once again here).
