Classic habit of a loud and live player “the quick volume knob turn” I know it well! it’s becomes second nature

One of the essentials to playing these 2-note per string pentatonic patterns at high speed is Down Ward Pick Slanting. This helps the pick escape getting stuck between two strings when switching strings. Sam has this technique down, however, as many great players out there, he may not even be conscious that he is using this technique.
